Sweet Potato Chips

Mel Mac gave me this recipe. Such a great snack. Kinda hard not to eat too many!
And very simple!

Ingredients:
One sweet potato sliced into chips
Tony's seasoning
Or cinnamon and splenda

Place sweet potato chips on baking sheet and bake for 20 to 30 mins at 375 degrees.
When they are done sprinkle tony's on them or for something sweeter try cinnamon and splenda!

Love these!

BBQ Chicken in Slow Cooker

I eat this a lot when I am dieting cause it is so fast and easy. If you make enough it will normally last for a few days also!

Ingredients:
3 to 6 chicken breasts
1 package McCormick seasoning ( BBQ pulled pork for slow cooker)
The rest of the recipe is on the back of this package.
Replace ketchup with low sugar ketchup
Replace brown sugar with splenda
Apple cider vinegar

Clean chicken and place in slow cooker. Mix all ingredients together and pour over chicken.
Cook on low for 8 hours or high for 4 hours.

I like to put it on at night so it is ready in the morning.

Pepper Steak

This is another one of my favorites. My mom used to make this for me when I was growing up and it's actually very healthy! I normally eat this over rice if I am having it for lunch but if I have it for dinner I just eat it like a soup. It's just as awesome without the rice!

Ingredients:
1 round steak or flank steak cut into small cubes or strips
2 cloves garlic minced
1/4 cup soy sauce
1 1/2 cups water
2 bell peppers cut into small pieces
1 can whole tomatoes
Salt and pepper to taste
2 tbs corn starch
2 tbs extra virgin olive oil

Brown steak in olive oil, add garlic and cook until yellow. Add all other ingredients except cornstarch. Be sure to break up tomatoes with your hands and add the juice from the tomatoes also. Bring to a boil then reduce heat and cover. Continue to cook for 30 mins.
Mix cornstarch with 1/2 cup water. Use this to thicken gravy but be sure not to use all at once. You may not need it all.
Serve over rice....... Or not!

Holiday Triffle

This recipe comes from Brandi Ginn and it's amazing! One of my favorite desserts!

Ingredients:
1 fat free sugar free angel food cake cut into one inch squares. (they sell these at the corner market)
1/2 can sweetened condensed milk
1 8oz container sugar free cool whip
1 box fat free sugar free INSTANT vanilla pudding
2 cups skim milk or almond milk
2 cup sliced strawberries
1/2 cup blueberries

In a bowl whisk milk and pudding mix for 2 mins until it thickens up. FOLD in cool whip. Be sure to fold and not stir so it stays light and fluffy.
Spoon 1/3rd of pudding mixture into 4 quart triffle bowl or large glass bowl. Then layer with half of the cake squares and fruit. Repeat layers once then top with remaining pudding mix. Garnish with whole strawberries and some blueberries!

Believe me..... Everyone in your family will love this! And as far as desserts go.... This one is not to bad for you! Well, as long as you don't eat the whole bowl! Lol!
